500g chicken wings
1 tbsp garlic purée
75ml dark soy sauce
75ml white wine vinegar
1 tbsp black pepper
1 tbsp adobo paste
3 bay leaves
1 tbsp ginger purée
1⁄2 tbsp brown sugar
50ml chicken stock
Garnish
100g crushed peanuts
Method
In a pan, add the chicken wings, garlic puree, soy sauce, white wine vinegar, black pepper, adobo paste, bay leaves, ginger purée, brown sugar and chicken stock.
Set to a medium heat, cover and simmer for approximately 20 minutes, then uncover and simmer for another 15 minutes until the sauce is reduced and thickened.
