Filipino Adobo Sticky Chicken Wings

Ingredients

Wings

  • 500g chicken wings
  • 1 tbsp garlic purée
  • 75ml dark soy sauce
  • 75ml white wine vinegar
  • 1 tbsp black pepper
  • 1 tbsp adobo paste
  • 3 bay leaves
  • 1 tbsp ginger purée
  • 1⁄2 tbsp brown sugar
  • 50ml chicken stock

Garnish

  • 100g crushed peanuts

Method

  1. In a pan, add the chicken wings, garlic puree, soy sauce, white wine vinegar, black pepper, adobo paste, bay leaves, ginger purée, brown sugar and chicken stock.
  2. Set to a medium heat, cover and simmer for approximately 20 minutes, then uncover and simmer for another 15 minutes until the sauce is reduced and thickened.
  3. Garnish with crushed peanuts.
